A Simple Recipe for Salmon With a Pesto Crust

A Healthy and Easy to Make Dinner Party Meal

Packed full of essential oils, low fat, and simple to make, this easy fish dish makes an impressive main course for four people.

Salmon is a healthy and delicious fish that is both easy to prepare and popular amongst guests. It is a light and nutritious food packed with protein and essential fatty acids. Because of its versatility, it makes an ideal simple main course for a dinner party.

Maximum Results With Minimal Effort

This recipe is surprisingly easy to make, but looks impressive. The preparation time is minimal, so the fish can be set aside while other elements of the meal are put together. The recipe combines salmon with baby new potatoes and fresh vegetables, providing a medley of colour on the plate.

This recipe serves 4 people.

Ingredients

  • · 4 large pieces of fresh boneless salmon fillet
  • · 2 slices of wholemeal bread
  • · One jar of green pesto
  • · Baby sweetcorn and trimmed green beans
  • · 400g baby new potatoes
  • · 1 handful fresh parsley
  • · Dash of white wine
  • · White sauce mix
  • · Seasoning, butter and milk
  • · Lemon to garnish

Method

  1. Preheat the oven to 180 degrees
  2. Wash and pat the salmon dry, leaving it skin side down
  3. Half-toast the four slices of bread and blend until they form fine breadcrumbs. Set aside.
  4. Using a teaspoon, spread the pesto on top of each piece of salmon so the top surface is completely covered with a 2mm layer
  5. Press the pesto-coated salmon in to the breadcrumbs, using your hand to pack the crumbs down on to the surface of each piece until the salmon has a thick layer of crumbs attached to the pesto to form a crust
  6. Add salt and pepper to the coated salmon and place in the oven in a non-stick roasting tin, adding a splash of white wine to the bottom to preserve moisture
  7. Bake for 45 minutes, or until the crust has turned deep brown and crisp and the salmon pieces are a pale pink all the way through
  8. Boil the new potatoes until soft. Drain water away and take off the heat
  9. Crush the potatoes lightly with a fork, adding in a knob of butter, salt and pepper, and a small splash of milk, until they resemble coarse mash
  10. Boil the sweetcorn and beans lightly until they are soft and ready to serve. Drain and set aside
  11. Finely cut the parsley, setting aside four sprigs
  12. Prepare the white sauce, adding in the parsley at the last minute and stirring rapidly
  13. On each plate, place a layer of the crushed potatoes, and then stack the sweetcorn and beans on top. Finally remove the salmon from oven and place on top, adding parsley and a twist of lemon to garnish
  14. Serve on warmed plates with the parsley sauce.

This dish can be modified in many ways. Chilli can be added to the crust for a more adventurous flavour, or try serving with baked sweet potatoes instead of baby new. Cod can also be used instead of salmon if preferred.

The meal is best served with a chilled dry white wine to compliment the fresh taste of the salmon and pesto.
