Coffee Cake That's Bursting with Apples and Cinnamon

This apple cake is the very essence of fall: chock full of apples, crunchy pecans and fragrant cinnamon. It makes the whole house smell good.

When apples are in season, this apple coffee cake recipe is at its best. Choose apples that have a good balance of sweet and tart and that can stand up well during cooking for this coffee cake recipe. The best types of apples for cooking include Gala, Golden Delicious, Jubilee, Rome Beauty, Stayman Winesap and Granny Smith.

Serve this apple coffee cake for a sweet breakfast treat with a nice cup of hot tea, a heavenly after-school snack or a healthy dessert. It's really one of those anytime recipes.

The nuts really add a lot of flavor (and heart-healthy mono-unsaturated fat) to this recipe. So don't leave them out, but feel free to substitute walnuts for the pecans, if you like. You can also toast the pecans if you like. That adds a deeper, nuttier flavor to this coffee cake recipe.

Apple Cake Recipe

Ingredients:

  • 1 cup unbleached all-purpose flour
  • 1 tsp. baking powder
  • 3 Tbsp. brown sugar
  • 2 tsp. cinnamon
  • 1/2 cup pecans
  • 1/4 cup + 1 Tbsp. ground golden flax seed meal
  • 4 Tbsp. unsalted butter
  • 1/2 cup granulated white sugar
  • 1 large egg, lightly beaten
  • 1/2 cup non-fat milk
  • 3 large cooking apples (such as Golden Delicious, Cortland, Jonathan, Rome Beauty, etc.), peeled and thinly sliced

Directions:

  1. Preheat oven to 375 degrees F. Spray a 9-inch pie pan with nonstick cooking spray. Sift together the flour and baking powder. Set aside.
  2. In a small mixing bowl, stir together the brown sugar, cinnamon and pecans. Set aside.
  3. In a large mixing bowl, beat the golden flax seed meal, butter and sugar together with an electric mixer. Beat in the egg and milk. Then gradually beat in the flour mixture. Do not overmix. Pour half of the batter in the bottom of the prepared pan. Top with the apples. Sprinkle half of the brown sugar mixture over the apples. Top with the remaining batter and the remaining brown sugar mixture. Bake 25 minutes or until golden brown.

Makes 8 servings.
