Avocado Salsa Recipe

A spicy and creamy salsa recipe you'll make again and again.

One of my favorite avocado recipes, this salsa pairs avocado with tomatoes, jalapenos and garlic for a creamy, spicy chip-topper you won't soon forget.

Avocados are full of heart-healthy fat, fiber, Vitamin C and folate. This salsa recipe is a terrific way to reap all the health benefits avocados offer. It goes great with my homemade tortilla chip recipe.

Avocado Salsa

  • 3 tomatoes, seeded and diced
  • 1 small red onion, finely diced
  • 1 jalapeno pepper, seeded and very finely chopped
  • 1 clove garlic, minced
  • 1/4 cup flat leaf parsley, chopped
  • 1 tsp. dried oregano
  • 1 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 4 oz crumbled feta cheese
  • 1 avocado, peeled, pitted and diced

Combine all ingredients, except feta cheese and avocado. Cover and refrigerate for 2-3 hours. Add cheese and avocado just before serving.

Serves 12

Per serving: 64 calories, 5 g fat, 8 mg cholesterol, 111 mg sodium, 4 g carbohydrate, 1 g fiber, 2 g protein, 7% Vitamin A, 19% Vitamin C, 5% calcium, 2% iron
