Bacon, tomatoes and spring onions (or scallions) are combined with olive oil to produce a delicious, easy to make and very healthy breakfast, lunch or dinner meal.

Bacon isn’t necessarily an unhealthy dining choice. In fact, research undertaken by the University of Reading, as reported in the New Scientist magazine in October 2001, showed that when a group of school children were given bacon butties (that’s sandwiches to non-Brits!) to eat for breakfast for a month there was a marked improvement in the children’s IQ.

Lean Bacon Cuts Make a Healthy Menu Choice

As long as lean cuts of bacon, such as back bacon, are used, and the majority of the fat is removed, this cured pork meat can be a healthy ingredient to many dishes. According to the Danish Bacon and Meat Council, bacon is now classified as being one of the leanest meats available (i.e. has the least fat) and is a brilliant source of protein and iron.

Spring onions (also known as salad onions, or scallions) are also an extremely good source of vitamin C, the B vitamin group and vitamin A. Combining these three ingredients, with a little bit of olive oil (an excellent monounsaturated fat) and just a tiny knob of butter for a bit of sinfulness (though this could be substituted for more olive oil) creates an extremely tasty and healthy meal.

Tomatoes Can Help Fight Prostate Cancer

The tomato is renowned for being rich in lycopene. This chemical is a powerful antioxidant which has been shown to help prevent cancers – particularly cancer of the prostate according to an article by the BBC News website on 30th September 2004. The fruit is also high in vitamin C, vitamin A, fibre and many other minerals and vitamins.

The quantities given in the recipe below will serve one person. The pictures show the dish paired with hot buttered toast for a tasty breakfast. It can however be added to a small amount of pasta for a light lunch or served piled high on a jacket (or baked) potato with a side salad of lettuce and cucumber for a more substantial dinner.

Recipe for Bacon, Tomato and Onion Bake

Ingredients:

  • A handful of cherry sized tomatoes (or 2 large tomatoes)
  • 2 spring onions (or scallions)
  • 1 lean rasher of bacon
  • Salt and black pepper
  • Knob of butter
  • Small quantity of olive oil

Method:

  1. Grease a small oven proof dish with some olive oil
  2. Wash and chop the spring onions into small pieces
  3. Wash the tomatoes and cut in half if using small ones, or quarter if using large ones
  4. Trim the fat from the bacon
  5. Cut the bacon into small pieces, about an inch long and half an inch wide
  6. Put all the ingredients into the greased oven dish and stir about
  7. Sprinkle with salt and black pepper to taste
  8. Dot with little bits of butter
  9. Pop in a preheated oven for about half an hour on gas mark 4, 180 C or 350F.
  10. Serve immediately for one of the meal suggestions given above
