Blonde Brownies

A chocolate chip brownie recipe made with healthy whole grains.

Bits of Lindt Extra Dark Chocolate Infused with Orange gives these blonde brownies a gourmet taste.

While some traditional blonde brownie recipes use butterscotch chips or nuts, this one features bits of dark Lindt chocolate. The result is a gourmet chocolate-chip cookie type of flavor with the texture and density of a brownie.

This blonde brownie recipe is not overly sweet or cloying. These brownies are made healthy by using whole wheat flour instead of all-purpose flour (no one will notice the difference) and less brown sugar. Lindt dark chocolate chips infused with orange essence really enhance the flavor of these blonde brownies, but feel free to substitute your own favorite chocolate chips, if you prefer.

The walnuts add a bit of fat to this recipe, but it is the heart-healthy monounsaturated fat, so it's good for you. But if you prefer, you can leave out the nuts.

I give a range for the amount of brown sugar, so you can decide for yourself how sweet you want these brownies. The addition of the dark chocolate chips makes them plenty sweet for me, with 1/2 cup of sugar, but if you prefer it sweeter, go ahead and add 3/4 cup.

Blonde Brownies (Chocolate Chip Brownies)

Preheat oven to 350 degrees F. Spray an 8-inch square baking pan with nonstick cooking spray. In a small bowl, whisk together the flour, baking powder and salt. Set aside. Place the butter in a microwave safe container (if you have a microwave-safe large mixing bowl, use that) and heat 30-45 seconds on 50% power. Stir and continue heating in 30-second increments until butter is fully melted. Remove from the microwave and allow to cool 10 minutes.

Add egg and vanilla to the butter, beating well. Stir in the brown sugar, then the flour mixture. Don't overmix the batter. Add the walnuts and dark chocolate pieces or chocolate chips. Spread batter into prepared baking pan. Bake 25-30 minutes until a knife inserted in the center comes out clean.

Makes 12 brownies.
