Carrot Cream Cheese Spread

Carrots combine with low-fat cream cheese in this sweet vegetable cream cheese spread that's perfect for muffins, scones and breads.

Serve this lightly sweetened cream cheese spread with sweet potato scones, pumpkin bran muffins or chocolate muffins.

Sweet Carrot Cream Cheese Spread

  • 2 oz. Neufchatel or light cream cheese
  • 1 Tbsp. powdered sugar
  • 1/8 cup grated carrots

Mix all ingredients together. Serve immediately.

Serves 6.

Per serving: 30 calories, 2 g fat, 7 mg cholesterol, 2 g carbohydrate, 0 g fiber, 1 g protein, 10% Vitamin A, 1% calcium
