Cheese Dip with Garlic

One of those easy appetizer recipes you can whip up in a jiffy.

Inspired by one of Alton Brown's recipes, this cheese dip is one of my favorite appetizer recipes.

Some of my favorite Alton Brown recipes are the simplest.

This cheese spread is adapted from his Fromage Fort recipe, and it's one of my favorite appetizer recipes, because it uses whatever cheese you have on hand. And it tastes a little different each time I make it.

It's not terribly low calorie, but it is a healthy source of protein, calcium and phosphorous.

Cheese Dip with Garlic

  • 16 oz. of several different kinds of cheese, such as fontina, parmesan, goat, cheddar, gouda, etc.*
  • 1 Tbsp. butter
  • 2 cloves garlic
  • 1/4 cup white wine

Shred cheese or cut into 1-inch chunks. Put all ingredients in a food processor and combine until mixture becomes the consistency of whipped cream cheese. Serve immediately with crackers, vegetables or bread.

*Use whatever cheese you have on hand in the fridge. This is a great way to use those leftover pieces of good cheese that are too small to do anything else with.

Serves 16.

Per serving: 118 calories, 9 g fat, 28 g cholesterol, 1 g carbohydrate, 0 g fiber, 8 g protein, 6% Vitamin A, 0% Vitamin C, 21% calcium, 1% iron
