Chili Dog Casserole

Chili Dogs, Gallagher

This recipe makes great Super Bowl party food. It takes just like a chili dog, but it's less messy and easier to serve a crowd.

I use black beans instead of chili beans in this recipe to boost the fiber and protein content. Although this chili dog casserole certainly isn't a low calorie dinner, it is full of healthy nutrients, including calcium, iron, protein, fiber and vitamins.

This recipe makes a healthy, kid-friendly dinner with carrot raisin salad on the side.

Chili Dog Casserole

Preheat oven to 350 degrees F. Spray a 9 x 13 pan with nonstick cooking spray. In a small mixing bowl, stir together salsa and black beans. Place a hot dog in the center of each corn tortilla. Top with a few tablespoons of salsa mixture. Roll up and place, seam side down, in prepared baking dish. Spoon remaining salsa mixture over chili dog rolls. Top with cheddar cheese. Bake 20 to 30 minutes, until cheese is melted and bubbly.

Serves 4.
