Chocolate Brownies with Peppermint

A low-fat brownie recipe made with bittersweet chocolate and just a touch of peppermint flavoring.

These brownies not only use healthy dark chocolate, but they also incorporate white whole wheat flour for extra fiber. If you can't find white whole wheat flour, substitute whole wheat pastry flour.

Chocolate Brownies with Peppermint

Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick spray. In a large, microwave-safe bowl, heat butter, sugar and water in microwave for 2-1/2 to 3 minutes until bubbly. Stir in chopped chocolate until smooth. Beat in eggs, one at a time. Add extracts. Sift together flour, baking soda and salt. Mix into chocolate mixture. Stir in peppermint chips.

Bake 15-20 minutes.

Makes 24 brownies

Per brownie: 138 calories, 7 g fat (4 g saturated), 28 mg cholesterol, 19 g carbohydrate, 1 g fiber, 2 g protein, 3% Vitamin A, 0% Vitamin C, 1% calcium, 3% iron
