Christmas Sugar Cookies

Lemon zest is the secret ingredient in these sugar cookies. The recipe also uses canola oil in place of butter to lower the fat. The result is sweet without being cloying

These Christmas cookies are perfect for decorating. The recipe is lower in calories and fat than most sugar cookie recipes, leaving you some calorie wiggle room to use on frosting.

Christmas Sugar Cookies

Preheat oven to 375 degrees. Line two cookie sheets with parchment paper or spray with nonstick spray.

In a large mixing bowl, beat sugar, canola oil, vanilla, lemon zest and egg whites until fluffly. Combine flours, baking soda and salt in a separate bowl. Stir flour mixture into wet ingredients, a little at a time, alternating with skim milk. Cover with plastic wrap and refrigerate several hours or overnight.

Roll dough out onto a lightly floured surface about 1/8-inch thick. Cut into desired shapes. Transfer to prepared cookie sheets. Bake 10 minutes or until just browned around the edges. Cool completely. Decorate with cream cheese frosting, if desired.

Makes 3-4 dozen cookies.
