This cream cheese icing is so rich and sweet, you'd never guess it's a diabetic recipe. And it doesn't use any sugar substitutes either.
This is one of my favorite icing recipes, and it goes great with my Christmas Sugar Cookies. I've adapted it from Diabetic Living magazine. Cream Cheese Frosting
Beat Neufchatel and vanilla with an electric mixer until creamy and smooth. Add powdered sugar gradually, beating well until frosting reaches desired consistency. You'll use between 3 and 3-1/2 cups of powdered sugar. Per teaspoon: 28 calories, 0 g fat, 1 mg cholesterol, 8 mg sodium, 6 g carbohydrate, 0 g fiber, 0 g protein.
