Cream Cheese Icing with Tofu

A creamy cake icing.

This cream cheese icing recipe is healthier than traditional cream cheese frosting, thanks to Neufchatel cheese (low fat cream cheese), tofu and less powdered sugar.

This recipe makes a great cake icing for carrot cake.

Cream Cheese Icing

  • 8 oz. Neufchatel cheese (or low-fat or non-fat cream cheese)
  • 12 oz. lite silken tofu
  • 1/3 cup butter, softened
  • 2-1/4 cups powdered sugar
  • 2 Tbsp. orange juice
  • 1 tsp. vanilla extract

Beat Neufchatel cheese, tofu, butter and sugar together until smooth and fluffy. Beat in orange juice and vanilla extract.
