Double Chocolate Coconut Brownies

Interested in cooking heart healthy recipes, but still love dessert? Satisfy your sweet tooth with this healthy brownie recipe.

I'm always looking for delicious healthy dessert recipes. These brownies are rich and chocolatey and packed with good, whole foods.

They use flaxseed meal -- an excellent source of omega 3 fatty acids -- in place of most of the oil, and dark bittersweet chocolate chips for a boost of antioxidants.

And these brownies are super quick to make because they start with a mix. The mix is the Kodiak Cakes Whole Wheat and Double Chocolate Mix, and it is made with 100% whole wheat and all natural ingredients.

Chocolate Coconut Almond Brownies

  • 1 package Kodiak Cakes Whole Wheat and Double Chocolate Brownie Mix
  • 1/4 cup oil
  • 3/4 cup flaxseed meal (ground flaxseed, not whole)
  • 1/4 cup water
  • 2 large eggs (preferably organic, omega 3-fortified)
  • 1 tsp. vanilla extract
  • 1 12 oz package dark chocolate chips (such as Ghiradelli 60% double chocolate chips)
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped, dry-roasted almonds

Spray a 13 x 9 pan with nontick cooking spray. In a large bowl, combine brownie mix, oil, flaxseed meal, water, eggs and vanilla extract until ingredients are well-moistened. Using floured fingers, press mixture into prepared pan. Bake 15-20 minutes in a 350-degree oven or until a knife inserted in the brownies comes out clean.

Leaving oven on, take the brownies out and sprinkle immediately with chocolate chips. Return pan to the oven for a minute or two until the chocolate chips melt completely. Remove the pan and spread melted chips evenly over brownies like frosting.

Immediately sprinkle coconut and chopped almonds over chocolate. Do this while the chocolate is still warm, so the coconut sticks. Cool, then refrigerate until chocolate is hardened.

Makes 24 servings.
