Healthy Recipe for Delicious Orange and Honey Pasta Pudding

The proof is in the pudding and this one is a winner. This healthy dessert recipe blends North African flavours of warm orange, honey and pistachio with ribbon noodles.

Half a cup of cooked pasta contains less than 100 calories. It is low in fat and even lower in salt. As a food with a low glycemic index (GI) the carbohydrate is released slowly and causes a slow rise in blood sugar.

We know that we should eat more fruit, and the oranges in this recipe are a source of vitamin C. Honey is the best natural sweetener. This is all good.

Now for the bad news: the most popular pasta dishes have sadly become the most boring – spaghetti Bolognese, cannelloni and lasagne, often baked with too much cheese. The time has come to rescue pasta from the mince and tomato brigade and serve it as a fruit dessert with honey, oranges and bright green pistachios.

Pistachio Lowers Cholesterol

Pistachio nuts add interest to the texture and flavor as well as being a cholesterol-lowering food. In April this year, research was published in Volume 26, issue number 2, of the Journal of the American College of Nutrition, stating that pistachio nuts may offer protective benefits against cardiovascular disease if eaten daily; presumably as part of a balanced diet.

Spaghetti Shapes

Pasta comes in so many different shapes from Bow Ties to Barbini (literally little beards, which are thin strands coiled together in batches). Choose from any of the ribbon noodle pastas for this quick and easy recipe. Linguine, vermicelli or ordinary spaghetti are all suitable. For something a little different try Capellini which is slightly thicker than Angel’s Hair. If you can find Stringozzi, it looks like shoe laces and works well in this dessert.

Orange, Pistachio and Honey Pasta Dessert

Serves 4

Ingredients

  • 3 oranges
  • juice of one orange plus zest for garnish
  • 4 tbsp honey
  • 3 tbsp brown sugar
  • 2 tbsp lemon juice
  • 1 tsp orange flower water (optional but gives a wonderful scent and flavour)
  • 1/2 cup pistachio nuts, shelled and roughly chopped
  • 8 oz/250 g dried pasta which should give 1 cup cooked pasta per person

Method

Sauce

  1. Peel and slice the 3 oranges, removing pith and skin and then slice in half and put aside.
  2. Place the orange juice in a heavy-bottomed saucepan, add honey,sugar and lemon juice.
  3. Gently bring to the boil to dissolve sugar and simmer until it thickens to a syrup.

Pasta

  1. Boil plenty of water in a large saucepand and add the pasta with 2 tsp olive oil or sunflower oil.
  2. Cook for about 9 minutes, depending on the type of pasta. It should be a bit softer than usual but not mushy.
  3. Drain well.
  4. Place back into saucepan and gently stir in the honey mixture.
  5. Add the orange pieces and heat through.
  6. Place into individual shallow bowls and sprinkle with half a teaspoon of orange zest and pistachio nuts.

Follow with a cup of tea for the perfect ending to a healthy meal.

What a great recipe - the details of the ingredients were interesting. But the best was how easy to make and tasty the pudding is - it's become a real favorite in my home

My future daughter-in-law was joining us for a Sunday night dinner, and after going through a ton of old recipes I decided to check out the recipes on Suite101. Jamie loves Pasta, so on seeing this interesting recipe I decided to give it a bash. Needless to say, everyone was rather taken aback at a pasta for dessert, but it proved to be a howling success. The lovely citrus flavour was wonderful. Great tasting and the recipe and the facts about the ingredients very informative.

One doesn't normally think of pasta as a sweet dish this has opened my eyes to other possibilities that are also nutritious and taste delicious.

Comment for Elaine’s recipe

This sounded a bit weird but I like all the ingredients separately so I gave it a go, and it worked well! Didn’t have orange flower water so used a little bit more orange juice instead, and substituted macaroni for the noodles. Looks pretty, with the orange pieces and pistachio nuts, and tastes light and fresh. A success!

PS a tip for anyone who hates getting pith off oranges: having peeled them, soak the WHOLE peeled fruit in very hot water for 5 – 10 minutes, this loosens the pith and it comes off easily using a knife-blade. Can then be sliced or segmented as needed.

I tried this because it seemed such an unlikely combination of sweet and pasta and, as other people have commented, it works! And it's quick and easy. One for the crisis occasion!

I decided to try it. I added kiwi directly to the sauce while cooking, also took a few mandarin oranges and threw them in, didn't use orange flower, did regular orange juice instead of squeezed, added a little extra. I took a banana and cooked in the mandarin orange juice after the sauce was out to add to it. It still seemed like it was missing something but I figured it out. Add some low-fat cottage cheese and wow, it's great. Didn't use pistachios, because I didn't have them. Try this variation. I think you will like it.
