A Recipe for a Healthy Summer Salad

With summer just around the corner, we are all changing our eating habits and want healthy foods to eat. This recipe will compliment your shrinking waistline!

As the temperature begins to rise across the United States and summer is approaching, many people want their waistlines to shrink in preparation for days spent at the pool and/or beach during the summer months. With each approaching day, thoughts turn to what we are putting in our mouths as we try to increase our exercise routines all with the expectation of losing some weight and appearing healthier and more attractive in our bathing suits.

Finding healthy recipes that are both appetizing and that are appealing to the whole family can be difficult. Grilled chicken and fish can be boring for many months in a row. However, finding some excellent side dishes can really bring some excitement back to the table. Here is a healthy and tasty side dish that is both easy to make and provides great color and depth to the table. Edamame salad is extremely healthy and low in fat. The main ingredient in the salad is edamame, which is a green vegetable that is typically known as a soybean and is also a great source of protein. Here is the recipe for edamame salad for which you can enjoy all summer long.

Take the edamame bags out of the freezer, open the bags and pour all of the edamame into a large serving bowl. Add the cup of white corn. Let the contents of the bowl sit on the counter for a half an hour in order to defrost.

After a half an hour, chop the red onion; peel the ginger and dice into small pieces. Seed and dice the tomatoes and add the onion, ginger and tomatoes to the serving bowl. Open the can of black beans, drain the sauce and add the black beans to the serving bowl.

Add the Lawry’s Sesame Ginger Sauce to the bowl and stir all of the contents in the bowl. Add salt and pepper to taste and slowly stir in feta cheese.

Let the salad remain in the refrigerator for at least 2 to 3 hours before serving in order for the flavors to blend throughout the salad.

What to Serve with Edamame Salad

This salad is an excellent side dish that can serve up to 10 people. Feel free to have some fun preparing different main dishes to accompany this side dish. Asian pork tenderloin is a great main dish that pairs well with this salad. However, though the salad does have an Asian flair, it doesn’t necessarily need to be paired with Asian foods. Simple grilled chicken, barbequed shrimp, grilled fish with lemon or any type of tastefully prepared protein can harmonize with this side dish and allow the flavors of each to stand out.
