There often isn't enough time to research, plan, and execute a dinner when you're a busy mom on the run. Here are some great fish entrees to prepare for a busy family.

If starting with fresh or frozen seafood, be sure to marinate it in the morning on your way out the door, it'll be ready for the grill when you return - a healthy and fresh start for dinner. It isn't easy when you're trying to pick up one child while dropping off another, and doing homework with a third or fourth. Dinner has to fit in there somewhere. Fish is fast, easy and healthy for your family. Try these amazing flavors with very little effort.

Grilled Salmon Steaks

Ingredients:

  • 1 cup mango chutney
  • 2 tablespoons balsamic vinegar
  • 4 salmon steaks (8 oz each)

Directions:

  1. Baste chutney and balsamic vinegar while grilling
  2. grill 5 mins on each side

Great Tasting Salmon on the Grill

Ingredients:

  • 1 cup maple syrup
  • 3 tablespoons fresh orange juice
  • 2 tablespoons butter
  • 2 teaspoons soy sauce
  • 1/4 teaspoon salt
  • 4 salmon fillets

Directions:

  1. boil syrup over med-high heat until reduced (approx 5 mins). to 1/2 cup
  2. add orange juice, soy sauce, and butter. Remove from heat.
  3. Sprinkle salt on fillets and brush with 1/2 of maple mixture.
  4. Grill on 400° high heat, basting occasionally, 5 mins on each side.

When serving salmon, reserved maple syrup mixture can be drizzled over salmon and veggies.

Patty's Party Fish

Ingredients:

  • 1/2 cup shredded parmesan cheese
  • 1/4 cup butter, softened
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh lemon or lime juice
  • 1/8 cup "Gourmet Garden" Basil Herb Blend
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 2 lbs Tilapia (or Basa, Grouper, or any other firm white fish)

Directions:

  1. Preheat your oven's broiler. Grease a broiling pan or line with foil.
  2. In a small bowl, mix together the Parmesan cheese, butter, mayo, lemon juice. Season with basil, pepper, onion powder and celery salt. Mix well & set aside.
  3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 3 mins. Flip the fillets over and broil for 3 more mins.
  4. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top.
  5. Broil for 2 more mins. or until the topping is browned and the fish flakes easily with a fork.

Easy Salmon & Crab Recipe

Ingredients:

  • 1 cup grated Parmesan cheese
  • 1 cup mayo
  • 1 cup crab
  • fresh lime juice
  • olive oil
  • slivered almonds

Directions:

  1. Mix together parm, mayo, crab.
  2. Cook salmon in lime juice and olive oil for 20 mins.
  3. Spread crab mixture on fish and broil 3-5 mins
  4. Sprinkle slivered almonds on fish at last minute (toasted or not)

Serve your fish entrees with a fresh, steamed asparagus, zucchini, or other green veggie. Cheers!
