Fresh Green Beans with Sea Salt

Fresh green beans are tossed with olive oil and sea salt in this flavorful side dish.

This is one of the simplest fresh green bean recipes you'll ever make. It's also one of the tastiest, thanks to Maldon sea salt, a delicate artisan sea salt that won rave reviews in a Slate Magazine article a few years ago.

You can find Maldon salt (approximately $5-$7 a box) at high-end food stores like Williams-Sonoma or online at Saltworks.

Green beans are an excellent source of fiber, riboflavin, folate, magnesium, potassium, manganese, Vitamin C and Vitamin K.

Fresh Green Beans with Sea Salt

Put green beans in a large pot. Bring to a boil. Cook 5-7 minutes until crisp-tender. Drain immediately. Toss with olive oil and sea salt.

Serves 4.

Per serving: 65 calories, 4 g fat, 0 mg cholesterol, 588 mg sodium, 8 g carbohydrate, 4 g fiber, 2 g protein, 15% Vitamin A, 30% Vitamin C, 4% calcium, 7% iron.
