Creating a Delicious Meal Free of Gluten

The recipes in this meal plan are missing the gluten, but filled with flavor.

For those affected by Celiac Disease, caused by sensitivity to wheat gluten, feeling better means eating a gluten free diet. If the thought of eating a gluten free diet has inspired panic, however, think again. Gluten free does not mean free of flavor. Using imagination and these simple ingredients, creating a gluten free meal is a piece of cake.

Poached Fish Filets

Mahi Mahi is a firm, white fish that holds together well when cooked. Other fish such as Salmon may be used, but may flake and fall apart when poached. The final eight ingredients from this recipe may all be found in the seasoning aisle. Using a seasoning blend will save time and expense over individual seasonings.

Serves two

Ingredients:

  • 2 Mahi Mahi Filets
  • 2 Lemons
  • 1/2 cup lemon juice
  • 1/2 cup lime juice
  • 1 cup water
  • 1 1/2 teaspoon crushed garlic
  • 1/8 teaspoon garlic salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion salt
  • 1/4 teaspoon dried parsley
  • 1/8 teaspoon dried orange peel
  • 1/4 teaspoon paprika
  • 1/8 teaspoon dried green bell peppers
  • 1/8 teaspoon pepper blend

Directions:

  1. Mix together lemon juice, lime juice, water and ½ teaspoon crushed garlic.
  2. Place fish filets in liquid mixture to marinate.
  3. Spread the other portion of crushed garlic over the top of each filet.
  4. Mix together all dry seasonings.
  5. Sprinkle dry seasonings over the top of each filet.
  6. Let marinate for at least 30 minutes.
  7. Cut fresh lemons into chunks large enough to set fish on top of in baking pan.
  8. Place lemon chunks into baking pan.
  9. When fish is done marinating, place fish filets on top of lemons.
  10. Pour marinade under fish. The pan should be filled high enough with liquid mixture to create steam while cooking. Adjust measurements as needed.
  11. Cook until tender, approximately 15 minutes.

Sautéed Vegetables

Stir up these veggies in a snap.

Ingredients:

  • 3 Zucchinis, sliced
  • 1 Walla-Walla sweet onion, sliced
  • 1/2 teaspoon sea salt
  • 1 tablespoon coconut oil

Directions:

  1. Melt coconut oil over medium heat.
  2. Sauté sliced onions for approximately 10 minutes over medium heat, until translucent.
  3. Add zucchini and sauté until soft.
  4. Sprinkle with salt and serve.

Easy Guacamole

Keeping frozen avocado halves on hand will guarantee fresh guacamole anytime.

Ingredients:

  • 1 avocado, halved
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon garlic, crushed
  • Lemon pepper, to taste

Directions:

  1. Place avocado halves into a medium sized bowl and mash with fork.
  2. Add lime juice, cilantro, garlic, and lemon pepper.
  3. Mix together.
  4. Serve and enjoy.

To add flavor to both the sautéed vegetables and the fish, place one dollop of guacamole in the center of the plate on top of both dishes. These three menu items are not only easy to make, but also served together make a mouth-watering, healthy, gluten free meal.
