Green Beans and Tomatoes

One of those green bean recipes that's sure to become a family favorite.

Vegetable recipes don't get much tastier than this one. Green beans are steamed and tossed with tomatoes, garlic, olive oil and Parmesan cheese.

Trying to get more fruits and vegetables in your diet? This green bean recipe is a tasty way to get two vegetable servings in one dish.

Green Beans with Tomatoes

  • 2 lbs. fresh or frozen green beans
  • 3 cloves garlic
  • 4 Tbsp. olive oil
  • 14 oz. can diced tomatoes
  • 1 tsp. parsley
  • 1/2 tsp. oregano
  • salt and pepper to taste
  • 1/2 cup Parmesan cheese

Preheat oven to 325 degrees. If using fresh green beans, wash and trim them. Steam green beans, covered, five minutes, or until crisp-tender. Drain. Heat oil over low heat in a large skillet. Add garlic and saute a few minutes. Add green beans, tomatoes, and seasonings, tossing until beans are well-coated with olive oil and seasonings. Transfer to a 2-quart baking dish. Sprinkle Parmesan on top. Bake 15 minutes.

Serves 8.
