In a food processor or blender, combine all ingredients except tomato. Pulse several times until you reach the desired consistency. It can be as smooth as youlike. Stir in tomato. Cover and chill in refrigerator at least 30 minutes. Serves 16. Per serving: 48 calories, 4 g fat, 0 cholesterol, 3 g carbohydrate, 2 g fiber, 1 g protein, 3% Vitamin A, 19% Vitamin C, 1% calcium, 1% iron
