Pancake, Tortilla and Other Easy Sandwiches to Make for School

These creative sandwich ideas use minimal ingredients and are easy to make.

The school season has arrived and with it, the need for healthy school lunch ideas. While standard sandwich and chip sack lunches are easy to prepare, presenting a variety of options may help to develop an interest in healthy eating for a lifetime.

There are many variations on the common sandwich and rotating these options may help to prevent lunchtime boredom. Instead of bread, use pancakes, waffles, corn or flour tortillas, or even rice cakes to make a sandwich. Tortilla chips may also be used to make miniature sandwiches stuffed with pepperoni or cheese slices. Instead of bready items, use lettuce to hold the contents. Additionally, dressing up an ordinary sandwich will help win over an interest in eating these healthier items.

The Pancake Sandwich

Pancakes replace the bread in this fun “breakfast for lunch” item. Use rice cakes instead of pancakes to create a crunchy sandwich treat.

Ingredients:

  • Pancakes
  • Peanut butter
  • Honey or jelly

Directions:

  1. Cover one pancake with peanut butter and the other pancake with either honey or jelly.
  2. Put both pancakes together to form a sandwich.

Healthy Finger Sandwiches

The small size of these sandwiches makes eating them half the fun.

Ingredients:

  • Whole grain or dark pumpernickel bread
  • Cucumbers, thinly sliced
  • Cream cheese, plain or herb variety
  • Sliced cheddar cheese

Directions:

  1. Cut the crust off of 2 slices of bread.
  2. Spread a light layer of cream cheese over both bread slices.
  3. Place sliced cucumbers over the cream cheese on one bread slice.
  4. Place sliced cheddar cheese on other bread slice.
  5. Put 2 bread slices together to form a sandwich.
  6. Slice into finger-sized sandwiches.

Tortilla Sandwiches

Roll them, shape them, or stack them; tortillas are a delicious versatile item for making sandwiches. For variety, experiment with different flavored tortillas such as Garden Spinach and Vegetable or Pesto and Garlic.

Ingredients:

  • Tortillas
  • Cream cheese
  • Sliced lunch meats or vegetarian lunch slices
  • Cucumbers, thinly sliced
  • Asparagus spears
  • Lettuce

Directions:

  1. To make stacked sandwiches, spread cream cheese on first tortilla.
  2. Alternate layers of additional tortillas, cheese, lunch meats, and vegetables.
  3. Use a knife to cut the sandwich into shapes such as rectangles or triangles. Or use a cookie cutter, to cut into other interesting shapes.
  4. Create a face by attaching olives, cucumbers, and asparagus to the top tortilla using toothpicks. Place asparagus spears inside the tortilla with the tops sticking out to create hair.
  5. As a variation, to make rolled sandwiches, layer ingredients beginning with cream cheese on tortilla; roll and slice into bite sized pieces.

All it takes is a little imagination to come up with additional healthy sandwich ideas. Using items commonly eaten by your household members,create the next edible masterpiece.
