A true superfood, pumpkin is high in fiber, low in calories, and rich in carotenoids, powerful antioxidants that are essential in maintaining eye health

A single slice of this low fat pumpkin bread has just 130 calories and 48% of the RDA of Vitamin A. But it tastes much richer.

That's why this pumpkin bread is one of my favorite Thanksgiving recipes. I serve it for breakfast with apple butter or just by itself.

It's also one of my favorite party foods. Just spread six tablespoons of whipped cream cheese on three slices of pumpkin bread (2 Tbsp. of cream cheese per slice). Top with three more slices of pumpkin bread and cut into 12 bite-sized sandwiches.

Pumpkin Bread Recipe

Ingredients:

Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray. Mix flour, baking soda, salt, cinnamon, nutmeg and cloves together in a small bowl.

In a large bowl, beat pumpkin puree, brown sugar, buttermilk, egg and oil together. Add dry ingredients to wet, stirring just until moistened (overmixing will cause the bread to become too tough). Add chocolate chips.

Pour into the prepared loaf pan. Bake for 1 hour.
