Adapted from Tyler Florence's famous "Meatloaf with Tomato Relish," this meatloaf recipe is a real winner. Make it tonight, and everyone will be begging for seconds.
What makes Tyler Florence's meatloaf recipe so special is the tomato relish. I take that idea and jazz it up with a few more veggies. Then I swap out the pork for ground turkey and voila! You get a delicious meatloaf recipe that's chock full of vitamins, too.
Heat olive oil in a large skillet over medium heat. Add onion, garlic and bay leaf. Saute for a few minutes. Add red pepper and zucchini and continue cooking until vegetables are softened. Add tomatoes, parsley, ketchup and Worcestershire sauce. Continue cooking about five more minutes until flavors come together. Turn off heat and let cool.
Preheat oven to 350 degrees. Tear bread and place it in a small bowl. Pour milk over bread. Let the bread soak up the milk. Set aside. In a large mixing bowl, beat egg. Add turkey, thyme, soaked bread, and half of the vegetable relish mixture. Mix thoroughly. Transfer to a loaf pan that has been sprayed with nonstick cooking spray. Spoon about half of the remaining vegetable relish over top.
Bake for 1 hour. Remove from oven and let rest. Heat remaining relish and serve it with the meatloaf. Enjoy!
