Oatmeal Raisin Cookies

Chewy oatmeal cookies full of whole grain goodness.

This is one of the healthiest oatmeal cookie recipes I have. I use yogurt and silken tofu instead of butter to lighten the fat load and make the cookies light and fluffy.

These oatmeal cookies are perfect for a satisfying, healthy, after-school snack. And like my oatmeal chocolate chip cookies and sugar cookies, they're made with whole wheat flour for an extra boost of fiber.

Oatmeal Raisin Cookies

Preheat oven to 350. Spray two cookie sheets with nonstick spray. Sift together flours, baking powder and cinnamon in a large bowl. Add sugar and oats until well combined. In a small bowl, beat the oil, tofu, yogurt and vanilla extract until smooth. Add to flour mixture. Stir in raisins. Drop dough by rounded teaspoons onto prepared cookie sheets and flatten slightly with your fingers. Bake 17-19 minutes until lightly browned. Transfer to a wire rack to cool.

Makes 48 cookies.
