This oatmeal raisin cookie recipe uses orange juice and orange zest for a bit of added zing.
Not all oatmeal cookies are healthy. But this orange oatmeal cookie recipe not only has less sugar than most oatmeal cookie recipes, it also has added fiber. You can buy white whole wheat flour at most supermarkets. If yours doesn't carry it, substitute all-purpose flour. Orange Oatmeal Cookie Recipe
Preheat oven to 350 degrees F. Spray cookie sheets with nonstick cooking spray. Cream together sugar, butter, vanilla, orange juice, orange zest and egg substitute in a large mixing bowl until well-mixed. Add flours, baking soda and salt. Add raisins and walnuts. Drop by rounded teaspoonsful onto prepared cookie sheets. Bake 10-12 minutes or until lightly browned around the edges. Makes 60 cookies.
