Looking for healthy snacks for kids? These crispy puffed rice bars with peanut butter will hit the spot.
These rice crispy bars are the perfect after-school snack. It's one of my favorite kid-friendly recipes. Peanut Butter Rice Crispy Treats
Spray a 9 x 9 pan with nonstick cooking spray. Mix puffed rice cereal, dried blueberries or raisins and flax seed meal together in a large bowl. Put peanut butter, maple syrup, honey and butter in a microwave-safe container. Microwave 1 minute on high. Stir. if butter has not melted, microwave another 30 seconds. Repeat until butter has melted. Pour over cereal mixture. Stir to coat. Press mixture into prepared pan using your hands. Freeze 30 minutes. Cut into bars. Keep refrigerated. Makes 12 bars. Per bar: 291 calories, 14 g fat, 5 mg cholesterol, 8 mg sodium, 38 g carbohydrate, 3 g fiber, 7 g protein, 1% Vitamin A, 3% calcium, 19% iron For more healthy snacks for kids, see also:
