Pumpkin Cookies with Orange GlazePumpkin cookies that make the whole house smell like the holidays!Cakey pumpkin cookies are topped with a sweet orange glaze. They're one of my favorite holiday cookie recipes and a great diabetic recipe, too.
When the weather turns cold, I start baking. This is one of those pumpkin recipes I love making for Halloween, Thanksgiving and Christmas. They're lower in calories and fat than many pumpkin cookie recipes, but you'll never notice the difference in taste. And with just 14 g carbohydrates per serving, these cookies are also one of my favorite diabetic recipes. Pumpkin Cookies with Orange Glaze
Preheat oven to 350 degrees. Spray two cookie sheets with nonstick spray or use parchment paper. Combine flour, baking powder, baking soda and spices in a medium bowl. In a large mixing bowl, beat sugar and butter together using an electric mixer. Add egg, pumpkin and vanilla, beating until fluffy. Gradually beat in flour mixture until well combined. Drop by rounded teaspoons onto prepared cookie sheets. Bake 15-18 minutes until edges are set. Cookies will not brown. Allow to cool a few minutes while preparing glaze. For Orange Glaze:
Whisk powdered sugar and orange juice together until smooth. Drizzle over warm cookies. Makes 36 cookies.
