Recipe Using Splenda Blends Instead of Granulated and Brown Sugars

This is a great cookie recipe using Splenda Sugar Blend and Splenda Brown Sugar Blend. It will be a hit for all members of the family with chocolate chips and pecans.

If you are looking for ways to cut the amount of sugar in the sweets made at home, try this recipe. It contains both white sugar and brown sugar Splenda Brand blends of sugar sweetener. Use the tips and information below for substituting white and brown sugar for the Splenda Sugar Blends.

Cookies using only Splenda as a sweetener will not brown in exactly the same way as cookies made with regular sugar, and they will not spread out in the same way. Once spooned or scooped out on the cookie sheets, flatten slightly with your fingers to help the cookies with their shape during cooking.

Chocolate Chip and Pecan Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 c Splenda Brown Sugar Blend
  • 1/4 c Splenda Sugar Blend
  • 1/2 tsp vanilla
  • 2 eggs
  • 2 1/4 c flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 12 oz chocolate chips
  • 10 oz pecans, chopped

Procedure:

  1. Place the softened butter in a mixing bowl and mix. Add in the Splenda Brown Sugar Blend and Splenda Sugar Blend. Cream together well, and scrape the bottom of the bowl.
  2. Add in the vanilla.
  3. Add the eggs one at a time, stopping and scraping the bottom well after each addition.
  4. Mix the flour, salt and baking soda together in a small mixing bowl. Add to the creamed mixture, scraping well, and stirring until everything is combined.
  5. Stir in the chocolate chips and chopped pecans.
  6. Drop by tablespoonfuls onto ungreased cookie sheets or use a cookie scoop and scoop out the dough. Press down lightly and bake in a preheated 375 degree oven.
  7. Bake cookies for about 10 minutes or until lightly browned. Transfer to a cooling rack to cool. Repeat with remaining dough.
  8. Alternately, the dough can be rolled into logs, chilled and sliced and baked.

Variations:

  • Skip the nuts and make them all chocolate.
  • Substitute pecans for chopped walnuts or sliced almonds.
  • Use butterscotch or white chocolate chips instead of the dark chocolate chips.

Tips for using Splenda Sugar Blends

Splenda Brown Sugar Blend has a mixture of real brown sugar and Splenda sweetener mixed together. With the brown sugar, the Splenda Brown Sugar Blend mimics many of the things that real brown sugar does to baked cookies, like browning, flavor and texture. The Splenda Sugar Blend is also a mixture of both regular granulated sugar and Splenda sweetener. This blend is great for baking cookies with as it helps with browning, volume and moistness that come with making them from real sugar.

Both of these sweeteners can easily be substituted for sugar for baking and cooking. For each of these Splenda sugar blends, use half the quantity of Splenda sugar blends for the amount sugar needed. For example, if a recipe calls for 1 cup of sugar, try using 1/2 cup of the Splenda Sugar Blend. Likewise for the Splenda Brown Sugar Blend: if a recipe calls for 1/2 cup of packed brown sugar, use 1/4 cup or 4 Tbsp of Splenda Brown Sugar Blend.
