Sweet Potatoes are an abundant source of many vitamins and minerals including: vitamin C, beta carotene and manganese. They also have a relatively low glycemic index making them a perfect substitute for the starchy white variety.
Rosemary Pork with Mashed Sweet Potatoes Recipe
Ingredients:
16 oz pork tenderloin
3 sprigs of Rosemary
3 medium Sweet Potatoes
1 tsp Cinnamon
1/2 tsp Cayenne Pepper
1 tablespoon Butter
Olive Oil
Salt and Pepper to taste
Sweet Potatoes Preparation:
Preheat oven to 400 degrees.
Wash and dry sweet potatoes. Puncture sweet potato to aerate.
Wrap each sweet potato in tin foil.
Place sweet potatoes in oven safe dish. Bake until thoroughly tender (approximately 55 to 60 minutes).
Roughly chop sweet potatoes.
Add sweet potatoes to food processor.
Process until sweet potatoes are smooth in texture.
Add butter, cinnamon and cayenne pepper. Process mixture until remaining ingredients have been incorporated.
Pork Preparation:
Preheat oven to 350 degrees.
Finely chop rosemary.
Spray oven safe dish with olive oil.
Add pork to oven safe dish.
Coat pork with rosemary, salt and pepper
Place pork dish in oven. Cook pork until internal temperature reaches 160 degrees (approximately 30 minutes)

Some studies believe that dishes containing cayenne pepper may display an increase in metabolism for a short period after consuming. Try adding cayenne pepper to any dish you add cinnamon to give it that extra kick.
An alternative to cooking sweet potatoes in the oven, you may also heat them in the microwave saving you time, the energy used by the oven and your power bill by reducing the cost spent cooling your home after cooking. Cook sweet potatoes in the microwave as follows: Wash, dry and puncture sweet potatoes. Place sweet potatoes in microwave safe dish. Heat on high for 4 to 5 minutes. Add 3 minutes to cook time for each additional potato. Flip each potato half way through cook time.
Whole fat, low fat, non fat? That is the question! Check out the list of ingredients when selecting dairy products such as butter and sour cream. You may be conditioned to selecting only fat free products. Is that the healthiest option? A carton of nonfat sour cream, for instance, has a whopping 10 ingredients. The low fat variety only has three. What are all those extra ingredients? Where do they come from! Hydrogenated what, Propylene who? A safe bet is to go for the one with the natural ingredients not those created in a lab.
