Fennel Orange and Pomegranate, Tomato Bocconcini and Caesar Salads

Why settle for mixed greens when it comes to making salad? These 3 alternatives will add extra flavor and provide a variety of choices when it comes to eating salad.

Salad is a healthy and essential part of any diet. When it comes to eating mixed greens on a daily basis, the downside is not having enough choices. Most people often rely on various store-bought salad dressings to add variety and flavor to salad. What many don't realize is the amount of unnecessary additives that are found in salad dressings. The easiest way to solve this is by looking at various ways to make salad. Here are 3 healthy and easy salad recipes you can make right at home:

Fennel, Orange & Pomegranate Salad

Ingredients:

  • 1 whole fennel (chopped into bite-sized pieces)
  • 2 oranges (chopped into bite-sized pieces)
  • 1 pomegranate (opened, so you can used its seeds)
  • 1 red onion (sliced thinly)
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of extra virgin olive oil
  • Salt and black pepper (for taste)

Directions:

  1. In a salad bowl, placed chopped fennel, oranges, pomegranate seeds, and sliced onion.
  2. In a separate small bowl, mix olive oil, balsamic vinegar, salt and pepper. Whisk well.
  3. Pour dressing over salad, mix well and enjoy!

This salad is great as a side to any dinner dish or eaten alone for lunch with crackers. It can be stored in the refrigerator for up to 2 or 3 days.

Tomato & Bocconcini Salad

Ingredients:

  • 3 ripe tomatoes (sliced)
  • 5-6 bocconcini (sliced) or small container of mini bocconcini
  • 2 tablespoons of extra virgin olive oil
  • 1 bunch of fresh basil (chopped)
  • Salt and black pepper (to taste)

Directions:

  1. Place sliced tomatoes in a flat dish or platter
  2. Place sliced bocconcini on top of tomato slices
  3. Sprinkle chopped basil, salt and pepper overtop
  4. Drizzle olive oil overtop as finishing touch, serve and enjoy!

A traditional Italian salad, the combination of fresh tomatoes and bocconcini cheese is a favorite especially in the summer months. However, the recipe includes ingredients that are readily available in grocery stores all year round, so why not enjoy a summer recipe in the fall and winter months?

Homemade Caesar Salad With Shrimp

Ingredients:

  • ½ cup of mayonnaise
  • 2 tablespoons of Parmesan cheese
  • 1 and ½ tablespoons of lemon juice
  • 1 tablespoon of balsamic vinegar
  • 2 eggs (hard boiled)
  • 2 cloves of garlic
  • 1 teaspoon of Dijon mustard
  • ½ teaspoon of salt and black pepper
  • 1 small package of cooked shrimp
  • Salad of your choice

Directions:

  1. Combine hard boiled eggs and remaining ingredients in a chopper or blender. Blend well and refrigerate until ready to serve with salad.
  2. Place salad greens of your choice in a bowl, place cooked shrimp overtop, drizzle Caesar dressing overtop, toss and serve. By adding shrimp to this salad, it instantly bumps up the flavor and texture of the overall salad, making a great combination.

We all know you can buy store-bought Caesar dressing in order to enjoy a Caesar salad, however making it at home is a healthy alternative, and easy to make. The dressing can stay in the refrigerator up to 2 days.
