In a recent interview with Sara Moulton, star of the Food Network series, Sara's Secrets, I asked her to help me solve a common dinner problem: How to get a super healthy dinner that my kids will like, on the table fast. This recipe for "Refried Bean" Burritos is her solution. She also shared some more tips with me on handling picky eaters. Sara Moulton's "Refried Bean" Burritos
Preheat oven to 300 degrees. Wrap the tortillas in aluminum foil and set aside. Heat 2 Tbsp. oil in a medium skillet over medium-high heat until hot. Reduce heat to medium, add onion, and cook, stirring occasionally, until softened, about 5 minutes. Place the wrapped tortillas in the oven to warm. Add the cumin and chili powder to the onion and cook 1 minute. Add the pinto beans and 1/2 cup of water and cook 5 minutes or until most of the water has evaporated. Remove from heat and mash with a potato masher or fork until the beans are smooth, with some lumps. Add salt and pepper to taste and keep warm while you cook the eggs. Heat the remaining oil in a large nonstick skillet over medium-high heat until hot. Reduce heat to medium-low, add eggs and swirl to distribute them evenly over the bottom of the skillet. Cover and cook, just until set, about 3 minutes. Slide eggs onto a cutting board, season with salt and pepper, and cut into 4 roughly equal strips. To serve, spread some of the bean mixture on each tortilla and top with a strip of egg, some cheese, salsa and crumbled tortilla chips. Roll up and serve. See also:
