Of all the Thanksgiving recipes out there for sweet potatoes, few showcase how delicious the savory combination of sweet potatoes and mashed potatoes can be.
This sweet potato recipe is not only great with turkey for Thanksgiving, but it's also a real treat as a Christmas side dish, when served along side roast beef or prime rib. Feel free to substitue Parmesan cheese for the Monterey Jack. Savory White and Sweet Potatoes
Preheat oven to 350 degrees. Place white potatoes and sweet potatoes in a large pot and cover with water. Bring to a boil over medium high heat. Allow to cook, uncovered, until fork-tender, approximately 15-20 minutes. Drain. Return to pot and mash with garlic, butter, olive oil and skim milk. Season with salt and pepper to taste. Pour potatoes into a 1-1/2 quart baking dish. Top with cheese. Bake 30-45 minutes, until cheese is browned. Serves 10. Per serving: 186 calories, 7 g fat, 17 mg cholesterol, 66 mg sodium, 4g fiber, 4 g protein, 115% Vitamin A, 39% Vitamin C, 8% calcium, 5% iron.
