Scalloped Potatoes with Cheese

Potato recipes don't get any easier or yummier than this scalloped potatoes recipe. Red potatoes are layered with red peppers and peas in a creamy, cheesy sauce.

Scalloped Potatoes with Cheese

Preheat oven to 350 degrees. Coat a 9 x 13" baking pan with nonstick cooking spray. Heat oil in a skillet over medium high heat. Sautee peppers until soft. Set aside.

Whisk sour cream, cream cheese and chicken broth together in a large bowl until well combined. Add peppers, peas and 1-1/2 cups of the cheese. Mix well.

Spread 1/4 cup of sour cream and cheese mixture in the bottom of the prepared baking pan. Layer half the potatoes on top. Spoon half the remaining sour cream and cheese mixture on top of the potatoes. Top with remaining potatoes, then remaining sour cream and cheese mixture. Sprinkle with remaining 1/2 cup shredded cheese.

Bake 50-60 minutes or until bubbling.

Serves 10.
