Healthy Steak Taco Recipe

The following ingredients are based on serving two people. Double as necessary.

  • 1 1/2 lbs of Steak (skirt or sirloin), cubed or shredded
  • 1 Jar of Salsa Verde
  • ½ Cup of Red Salsa
  • 1 ¼ Cup of Long Grain Brown Rice
  • 1 Cup of Water
  • 6-10 Small Corn Tortillas
  • Fat-Free Sour Cream (optional)

How To Make Salsa Verde Steak Tacos

  1. Preheat oven to 350 degrees.
  2. In a small saucepan, bring water to boil.
  3. Add red salsa and rice. Cover and reduce heat to low, stirring occasionally.
  4. While rice is cooking, prepare steak by trimming fat, followed by shredding or cubing.
  5. Pour entire jar of salsa verde into a medium frying pan.
  6. Add cubed or shredded steak and cook on medium to high heat, stirring as needed to cover every piece of steak in the salsa. Cook steak until the salsa verde is reduced and very thick.
  7. Cook rice until the water evaporates and holes appear on the surface. Rice should be very soft, fluffy, and thick.
  8. Put the tortillas into the preheated oven for three to four minutes. They should be soft, warm, and pliable. A rubbery consistency is undesirable.

How To Serve Salsa Verde Steak Tacos

  1. Put the rice into one bowl, the steak in another, and the tacos on a small plate. That way, portions can be controlled and the food will stay warmer longer.
  2. Spread two tablespoons of rice onto a soft tortilla and then add two tablespoons of steak on top. Fat-free sour cream can be added if desired without guilt or calorie concern.
  3. Enjoy!
