Strawberries with Balsamic Vinegar

Top Chef Judge Tom Colicchio loves cooking with seasonal ingredients, especially strawberries. This strawberry recipe is so easy anyone can make it.

With just three ingredients, this strawberry recipe is a cinch to make. But what makes it so good is the quality of the ingredients. Be sure to use the freshest strawberries you can find, Top Chef Judge Tom Colicchio advises. And if you can find them, go with organic strawberries.

This recipe is absolutely delicious served over vanilla ice cream or yogurt, too.

Tom Colicchio's Strawberries with Balsamic Vinegar

1 quart strawberries, cleaned and quartered

1/4 cup plus 2 Tbsp. superfine sugar

1/4 cup balsamic vinegar*

Sprinkle sugar over strawberries, tossing gently. Let mixture sit for about 15 minutes until the sugar is dissolved. Add balsamic vinegar. Taste and adjust sweetness as desired.

*If you want something really special, replace the balsamic vinegar and sugar with vincotto or saba, a sweet vinegar or fruit syrup derived from grapes.

The taste is less acidic than balsamic vinegar. Instead, you'll get a carmelized fruit flavor, according to Colicchio. Vincotto and saba can be found at Italian specialty markets or online at iGourmet.
