Stevia makes a wonderful sugar substitute. The herb is natural, low calorie and does not make blood sugar levels spike. Try these recipes for sweet, healthy treats.
Stevia is very sweet, so only small quantities need to be substituted for sugar. Stevia can be used in powdered form, liquid or ground leaf form. The recipes will give an idea of the quantities needed, but since the taste is a little different to sugar, experiment a little to find the right balance.
Stevia does not adversely affect blood glucose levels and may be used freely by diabetics.
Stevia Coconut Macaroon Recipe
Ingredients:
1 1/2 cups dried, shredded coconut
3 large egg whites
1/2 teaspoon vanilla extract
Pinch salt
1 teaspoon dried ground stevia leaf.
Method:
Preheat oven to 180 degrees Celsius (325F)
Whip the egg whites and vanilla until stiff and glossy.
Fold in the coconut, stevia and salt into the egg white mixture until well combined.
Make drop cookies on a baking sheet lined with rice paper.
Bake for 10 - 15 minutes or until slightly brown.
Sugar Substitute Stevia Strawberry Jam
Ingredients:
1kg (2lb) fresh strawberries, cleaned and sliced
1 1/2 to 2 teaspoons Herbcare Stevia Supreme concentrate
1 tablespoon fresh lemon juice
Method:
Allow the strawberries to simmer in a heavy based saucpan, mashing when soft.
Dissolve Stevia in the lemon juice and stir into the strawberries. Simmer until thickened, about 30 - 40 minutes.
Cool and refrigerate in a covered jar or store in the freezer.
Stevia Cheesecake
Ingredients:
1 1/2 cup pecan or walnuts, chopped
1 teaspoon stevia powder
2 tablespoons of nut butter, softened
1 envelope unflavored gelatin
1 cup of cold water
2 packets cream cheese softened (8 oz each)
1 tsp. vanilla extract
2 blocks unsweetened, dark chocolate, melted
Method for Cheesecake base:
Preheat oven to 180 degrees Celcius (325F).
Grease and line a round cake tin.
Combine pecans, 1/2 teaspoon stevia and the nut butter.
Press pecan mixture into bottom and up the sides of pan.
Bake until golden, about 10 minutes and allow to cool.
Method for Cheesecake:
In small, heavy based saucepan, sprinkle gelatin over 1/4 cup cold water; allow to stand for 1 minute.
Stir over low heat until gelatin is dissolved.
With mixer on high, beat cream cheese, vanilla and remaining Stevia until well blended and smooth.
On a low speed, gradually beat in gelatin mixture and remaining cold water until smooth.
Keep back 1 cup cream cheese mixture. Pour remaining mixture into crust.
Place reserved cream cheese mixture back into bowl.
With mixer low gradually beat chocolate into cheese mixture. Dollop chocolate mixture on top of cheesecake. Swirl with knife to make a pattern.
