Here’s a great solution- whip up a batch of these wholesome muffins during the weekend, pop them in the freezer and enjoy the taste of freshly baked muffins and the healthiness of oatmeal every day! Whole wheat flour adds extra fiber and helps keep you satisfied well until lunchtime while flaxseed provides essential fatty acids. The recipe also calls for relatively little fat. Note: You can use jam (any flavor) instead of the marmalade. If you like, you can also add a few handfuls of chopped nuts to the batter. Remember that muffin batter should be stirred lightly. Beating the batter or stirring too fanatically will make your muffins tough. You can defrost the muffins by taking them out of the freezer the night before or by popping them in the microwave. The muffins make great lunchbox treats for the kids to take to school. For a quick breakfast on the go, simply add a small bottle of fruit juice, milk or a piece of fresh fruit.
