A bowl of oatmeal is one of the best examples of a perfect breakfast. There's so much to love about oatmeal- it is warm, comforting, versatile, filling and let's not forget, healthy. Oats are known to lower your cholesterol, therefore reducing the risk of cardiovascular disease. Oats also reduce the risk of cancer and even improve mood. But truth be told- not many of us have the time to fuss over a stove in the morning in order to have that perfect bowl of oatmeal. Here’s a great solution- whip up a batch of these wholesome muffins during the weekend, pop them in the freezer and enjoy the taste of freshly baked muffins and the healthiness of oatmeal every day!

Super Healthy Ingredients

The muffins are extra healthy thanks to the addition of ingredients such as whole wheat flour and flaxseed. Whole wheat flour adds extra fiber and helps keep you satisfied well until lunchtime while flaxseed provides essential fatty acids. The recipe also calls for relatively little fat. But who are we kidding? You should go ahead and make these muffins not just because they’re so healthy, but because they’re so good!

Super Healthy Oatmeal Muffins

Makes 12 muffins

Ingredients:

  • 250 g whole wheat flour
  • 50 g all- purpose flour
  • 2 tsps baking powder
  • ½ tsp baking soda
  • 150g oatmeal
  • 100 g flaxseed
  • 1 egg
  • 50 ml sunflower oil
  • 150 g thin- cut marmalade
  • 200 ml buttermilk
  • 80 g unrefined cane sugar

Method:

  1. Preheat oven to 200C and line a muffin tin with liners.
  2. Combine the flours, baking powder and baking soda in a bowl. Add the oatmeal and the flaxseed and stir again to combine.
  3. In a jug, whisk the egg, oil, marmalade, buttermilk and sugar.
  4. Add the wet ingredients to the dry ingredients and stir everything gently, just until combined.
  5. Spoon the batter into the prepared muffin pan and bake for 20 minutes or until tester comes out clean.

Note: You can use jam (any flavor) instead of the marmalade. If you like, you can also add a few handfuls of chopped nuts to the batter. Remember that muffin batter should be stirred lightly. Beating the batter or stirring too fanatically will make your muffins tough. You can defrost the muffins by taking them out of the freezer the night before or by popping them in the microwave. The muffins make great lunchbox treats for the kids to take to school. For a quick breakfast on the go, simply add a small bottle of fruit juice, milk or a piece of fresh fruit.
