Whether it’s intimate gathering with family and friends a pot-luck style soiree, these salmon dishes will be sure to have mouths watering and guests begging for more. Healthy and easy to make, salmon is perfect for the holidays or any occasion.

Brown Sugar Salmon

Paired with a Riesling, or a simple glass of your favorite non-alcoholic beverage, this dish severed with garlic and herb pasta, and steamed vegetables is perfect for a romantic Valentine’s dinner for two, or as the all star entrée for an afternoon lunch with friends.

Ingredients

  • 1/4 cup butter
  • 1 clove garlic, minced
  • 4 (6 ounce) salmon fillets
  • 3 large onions, thinly sliced
  • 1 cup white vinegar
  • 1 cup brown sugar

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil, and grease the foil with cooking spray.
  2. Combine the onions, vinegar and brown sugar in a saucepan over medium heat. Cook, stirring occasionally until the sauce begins to caramelize, about 15 minutes.
  3. Melt butter with garlic in a small skillet over medium heat. Lay salmon fillets on the prepared baking sheet, and brush with garlic butter. Pour the onion mixture over the fillets.
  4. Bake for 20 to 25 minutes in the preheated oven, until the fish flakes easily. Cooking time may vary with the thickness of your fillets.

Serving size: 6

Maple Glazed Salmon

Garlic mashed potatoes, and steamed broccoli compliment is delectable dish. Serve with your favorite Pinot Noir and you’ll be the toast of the town.

Ingredients

  • 1/4 cup and 2 tablespoons maple syrup
  • 3 tablespoons soy sauce
  • 1cloves minced garlic
  • garlic salt and pepper to taste
  • 1-1/2 pounds salmon

Directions

  1. Mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
  2. Place salmon in a shallow glass baking dish, and coat with the maple mixture. Cover the dish, and marinate refrigerator 30 minutes, turning once.
  3. Preheat oven to 400 degrees
  4. Bake salmon uncovered 20 minutes, or until easily flaked with a fork.

Bourbon Salmon

A Dirty Martini, brown rice, and your choice of steamed asparagus or a vegetable medley will bring out the best in the meal.

Ingredients

  • 1/4 cup and 2 tablespoons butter
  • 3/4 cup dark brown sugar
  • 6 (6 ounce) salmon steaks
  • 1/2 cup bourbon whiskey
  • light season (salt and pepper to taste)

Directions

Melt butter in a large heavy skillet over medium heat. Stir in brown sugar. Place salmon fillets on top mixture. Cook for 5 minutes on medium heat. Turn salmon, and pour bourbon around the fillets. Continue cooking for 5 minutes, or until fish flakes easily with a fork. Spoon glaze over the salmon, and serve.

Salmon with Pecan Glaze

A romaine-based salad with a topping of honey and brown sugar glazed coarsely chopped pecans will make this salmon dish stand out as a holiday favorite.

Ingredients

  • 1-1/2 cups pecan pieces
  • 1-1/2 cups honey
  • 1-1/2 cup butter
  • 1/2 cup vegetable oil
  • 6 (4 ounce) fillets salmon
  • salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees. Spread pecans in a single layer on a baking sheet. Bake 8 to 10 minutes, or until slightly browned.
  2. In a small saucepan combine honey with half of the butter. Stir in the toasted pecans, and cook for 8 to 10 minutes. Remove from heat, and keep warm.
  3. Melt remaining butter with oil in a large skillet. Season fish with salt and pepper. Arrange fillets in skillet, and cook until firm. Salmon is done when it flakes easily with a fork.
  4. Add glaze after salmon is on a plate.
