February is National Sweet Potato Month, and there are many ways to enjoy this delicious and ultra nutritious superfood besides the ubiquitous sweet potato casserole.
Try oven-baked sweet potato fries, sweet potato bread (made easy in the bread machine), mashed sweet potatoes and white and sweet potato gratin.
Or make a sweet potato s'mores with a slice of baked sweet potato topped with a chocolate bar and a marshmallow between two graham crackers for a sinfully delicious treat.
