Salads make wonderful dinners in the summer. But some salad recipes are full of hidden fat. Not these.

Summer time is salad time. You want something light and refreshing, but it has to be filling enough to give you the energy to swim, surf, play tennis or play a round of golf.

These main dish salads are just the ticket. You can throw them together in less than 20 minutes, and you don't even have to turn on the oven (a huge plus when the temperature outside is 98 degrees F!).

Serve these main dish salads with a thick slice of homemade whole wheat bread or Italian bread and a cup of tomato soup with red peppers.

Try these main dish salads tonight:

  • Fuji Apple Walnut Chicken Salad -- Crunchy dried apple crisps, blue cheese and chopped walnuts highlight this salad made with Rotisserie chicken breast.
  • Cobb Salad -- An updated version of the classic Brown Derby creation.
  • Panzanella -- A meaty version of the traditional Italian tomato and bread salad.
  • Shrimp Salad -- Orzo pasta, baby spinach and goat cheese make this roasted shrimp salad worthy of serving to company.
  • Paella Salad -- Shrimp and chicken are mixed with yellow rice and vegetables in this cold version of the classic Spanish dish.
