Whenever I'm stuck in a what-to-have-for-dinner rut (which, by the way, happens just about every Tuesday), I think, pasta! Pasta is one of my go-to meals because it's easy, everyone in the family likes it, and I can make a million variations of sauces, depending on what's in my fridge.
Last week, I had some beautiful radishes from my CSA share, so I whipped up a radish basil pesto sauce and just tossed it with some pasta. We liked it so much, I used the leftover radish basil pesto for a vegetable lasagna the next night. Mmmm...boy was that delish! In fact, we liked the lasagna so much, I didn't even get a chance to take a picture of it for the recipe. Oh well.
Vegetable spaghetti sauce is always a favorite (and a great way to get the kids to eat veggies), and I can use the leftovers for spinach manicotti or chicken parmesan.
And when I'm faced with a fridge full of fresh spinach that's about to go bad, I turn it into spinach pesto, which I use on pasta or shrimp and pesto pizza.
