Mother's Day is less than a week away. Do you know what you're cooking?


I've never been much of a spa-gift kinda gal. I'd rather have a nice home-cooked meal (with someone else doing the dishes!) than a massage or manicure any day.

But even if your mom isn't a foodie, chances are, she'll still appreciate a good meal that she doesn't have to cook. Here are ten of my favorites for Mother's Day. They aren't complicated -- some are even easy enough for young kids to handle. And they're all delicious.

1)CrockPot Oatmeal

What can I say? I know it isn't fancy. It doesn't scream, "special occasion," but this oatmeal recipe is darned good. And it gets made a day in advance. Easy!

2) Antioxidant Smoothies

At the risk of sounding like a perfectionistic nutritionist, this smoothie is the perfect way to start the day. Sure, it's jam-packed with antioxidants. But it's also downright delicious. Mom will start the day feeling great with one of these, and it takes just a few minutes to throw together.

3) Chocolate Chip Scones

They look decadant. They taste delicious. They'll never believe they're made with whole wheat flour and flaxseed meal. Shhh. No one has to know.

4) Blueberry Corn Muffins

The blueberries really make these savory corn muffins a standout winner.

5) Zesty Guacamole Salsa

Wanna kick up that guacamole recipe a notch? This is the one to go to. It's packed with heart-healthy monounsaturated fat, fiber and Vitamin C -- the perfect appetizer any time of the day.

It's salty, it's savory and it looks fabulous on the table. Serve it as an appetizer, a side dish or just a snack. They'll think you slaved for hours. Shhh. No one has to know this recipe is a cinch.

The first time I made these for the teacher appreciation lunch at the elementary school, I felt like a rock star. Teachers stopped me in the halls for weeks after asking for the recipe. It's delightfully simple. Yet the flavors are the perfect combination of sweet and savory.

Yes, Italian grandmothers are rolling in their graves at my definition of "panzanella," the traditional tomato and bread salad beloved by Italians everywhere. I risk upsetting the keepers of authenticity simply because this salad is so scrumptious. It really is. Go ahead. Try it.

9) Roasted Green Beans

You won't believe me until you try these. They get all browned and caramelized and oh, so tasty. I dare you to eat just one.

10) Chocolate Strawberry Tarts

Chocolate? Chocolate? Did someone say chocolate? No self-respecting "must have" list of recipes for women would be without chocolate. And with just six ingredients, these tarts are as easy as they are tasty.
