Forget running errands or hitting the mall.
In the winter time, there's nothing better than taking time on the weekend to cook warm, satisfying meals you can eat for days afterward.
I start off by making a big batch of crockpot oatmeal on Friday night. That way, we get to wake up to a nice hot breakfast on Saturday, and I don't even have to go in the kitchen! Plus, this oatmeal recipe makes enough for several days of leftovers.
Later in the day, I'll make some chicken noodle soup or baked potato soup. And I'll crank up the bread machine, so we can have nice hot sally lunn bread or whole wheat bread with our soup.
For dinner, we might go out or I might make an easy chicken dish, like chicken parmesan, and serve it with brussels sprouts with pistachios.
And on Sunday, I'll make my favorite meatloaf with vegetable relish or Crockpot Jambalaya served with butternut squash casserole and chocolate chip cookies for dessert. Both main dishes are easy, yet delicious enough for company, and they're guaranteed to give us another meal of leftovers on Monday.
So take some time away from the rat race this weekend and get cooking!
