Got the mid-week dinner blahs? Don't know what to make? Or don't feel like cooking at all?
I hear ya. When I'm busy with work, and the kids have a million activities, I look for quick and easy recipes I can pull together with ingredients I'm likely to already have on hand. Here are six of my favorites:

- Baked Chicken and Mushrooms -- A fast and delicious way to make any night of the week special.
- Shrimp Salad -- Light and refreshing combination of roasted shrimp, baby spinach and orzo pasta.
