White Whole Wheat Flour

The best thing to happen to whole foods baking since sliced bread.

White whole wheat flour is an excellent alternative to all-purpose flour for healthy chocolate and dessert recipes.

White whole flour has been around for over ten years, but it hasn't gotten much attention in the press. That's unfortunate, because this albino strand of wheat has the exact same nutritional profile as traditional "red" whole wheat flour. But it produces a lighter, more tender baked product than traditional whole wheat flour. That makes it an ideal substition for virtually all of your healthy dessert recipes.

I use white whole wheat flour in my pumpkin brownies, my pumpkin chocolate chip cookies and my chocolate chip scones. It's also wonderful in bread baking.

I like the King Arthur brand, available in most grocery stores. Bob's Red Mill also sells white whole wheat flour, which you can buy online or at Whole Foods Market.

For more great whole grain recipes, check out King Arthur's new cookbook, King Arthur Flour Whole Grain Baking. This is a wonderful collection of some of the tastiest whole foods recipes I've ever seen.
